This Weight Watchers broccoli cauliflower salad is a perfect lunch or a side dish for dinner! It's a great summer salad recipe!

Ingredients

Salad ingredients:

  • 4 C broccoli, diced small
  • 4 C cauliflower, diced small
  • 1 C chopped bacon
  • 2 C fresh blueberries
  • 1/2 C chopped red onion
  • 1 1/2 C lowfat Colby jack cheese, cut into small cubes

Dressing ingredients:

  • 3/4 C fat free greek yogurt
  • 1/2 C light mayo
  • 1/4 C sugar free honey substitute
  • 2 tbsp red wine vinegar
  • 1 tbsp splenda
  • 1/4 tsp sea salt

Instructions

  1. In a small bowl, combine all the dressing ingredients and mix with a whisk until smooth
  2. Set aside in the fridge
  3. Using a large mixing bowl, combine all of the salad ingredients
  4. Drizzle the dressing over the salad and mix until evenly coated
  5. Place salad into the fridge for an hour or until ready to serve.
  6. Toss salad again before serving
