Making Weight Watchers turmeric chicken is easy! This is a great weeknight dinner recipe that everyone will love.

Ingredients

  • ½ cup plain greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon turmeric
  • 1 tablespoon ginger
  • 1 tablespoon lime juice
  • 2 teaspoon garlic, minced
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • 4 boneless, skinless chicken breasts
  • Cooked basmati rice, for serving
  • Parsley, for garnish

Instructions

  1. In a bowl whisk together Greek yogurt, olive oil, turmeric ginger, lime juice, garlic, coriander, and salt marinade until well combined and pour into a ziplock bag
  2. Place chicken in bag and coat thoroughly.
  3. Marinate in refrigerator for at least 2 hours but overnight is best.
  4. Bake at 400 for 30-45 minutes
  5. Slice and serve over basmati rice or cauliflower.
  6. Garnish with parsley and enjoy!
