Baked Sweet Potato Slices

These baked sweet potato slices are the perfect recipe to enjoy as a delicious appetizer, or even as a healthy afternoon snack!

Ingredients

  • 2 Tbsp Olive Oil extra virgin
  • 1 tsp Salt
  • ½ tsp Pepper
  • 1 tsp Rosemary
  • 3 medium Sweet Potatoes

Instructions

  • Preheat the oven to 375℉. Line a baking sheet with parchment or foil (and spray with non-stick spray). Set aside.
  • Peel and slice the sweet potatoes into ¼ inch thick slices.
  • Lay the sweet potato pieces out on the prepared baking sheet, separating the pieces when needed.
  • Drizzle the olive oil over the potato pieces.
  • Sprinkle with the salt, pepper and rosemary. Toss to coat.
  • Cook in the preheated oven for about 30 minutes or until the sweet potatoes are tender and the edges are golden brown. Serve Warm.
