Slow Cooker Corned Beef Brisket

This slow cooker corned beef brisket is a delicious meal to enjoy year round, and is a great dish to make to celebrate St. Patrick's Day!

Ingredients

  • 4 lb Corned beef brisket w/ spice packet
  • 4 large Carrots peeled & chopped
  • 12 - 14 Baby red potatoes
  • 1 Onion chopped
  • ½ Head of cabbage chopped rough (approx 1 1/2 lbs)
  • 4 cups Water
  • Salt & Pepper to taste

Instructions

  • Place carrots, potatoes, and onion in the bottom of slow cooker
  • Pour water over vegetables
  • Place brisket on top of vegetables and sprinkle on spice from packet
  • Cook on low for 6 hours
  • Add in chopped cabbage and cook for an additional hour
  • Remove brisket to slice and serve on top of vegetables
