Slow Cooker Corned Beef Brisket
This slow cooker corned beef brisket is a delicious meal to enjoy year round, and is a great dish to make to celebrate St. Patrick's Day!

- 4 lb Corned beef brisket  w/ spice packet
- 4 large Carrots peeled & chopped
- 12 - 14 Baby red potatoes
- 1 Onion chopped
- ½ Head of cabbage chopped rough (approx 1 1/2 lbs)
- 4 cups Water
- Salt & Pepper  to taste
- Place carrots, potatoes, and onion in the bottom of slow cooker 
- Pour water over vegetables 
- Place brisket on top of vegetables and sprinkle on spice from packet 
- Cook on low for 6 hours 
- Add in chopped cabbage and cook for an additional hour 
- Remove brisket to slice and serve on top of vegetables
