Slow Cooker Corned Beef Brisket
This slow cooker corned beef brisket is a delicious meal to enjoy year round, and is a great dish to make to celebrate St. Patrick's Day!

- 4 lb Corned beef brisket w/ spice packet
- 4 large Carrots peeled & chopped
- 12 - 14 Baby red potatoes
- 1 Onion chopped
- ½ Head of cabbage chopped rough (approx 1 1/2 lbs)
- 4 cups Water
- Salt & Pepper to taste
Place carrots, potatoes, and onion in the bottom of slow cooker
Pour water over vegetables
Place brisket on top of vegetables and sprinkle on spice from packet
Cook on low for 6 hours
Add in chopped cabbage and cook for an additional hour
Remove brisket to slice and serve on top of vegetables
