This Cheesy Potato Recipe Is The Cozy Meal You Didn’t Know You Needed

There’s something quietly impressive about a dish that asks for so little yet gives so much in return.

Ingredients

3 eggs
Handful of parsley, chopped
Salt and black pepper, to taste
½ teaspoon sweet paprika
½ teaspoon garlic powder
3 potatoes, peeled and grated
1 leek, sliced
½ tablespoon butter
½ tablespoon olive oil
100 g (3.5 oz) mozzarella cheese

Prepare The Base

Whisk together three eggs, salt, black pepper, sweet paprika, garlic powder, and a handful of chopped parsley.

Set aside while you grate three potatoes. Soak the grated potatoes briefly in cold water to remove excess starch, then drain and pat dry.

Slice one leek thinly and combine it with the potatoes, creating a flavorful, earthy mix that will form the heart of the tortilla.

Pour the egg mixture over the potato and leek mixture, stirring until evenly coated.

Heat half a tablespoon of butter with half a tablespoon of olive oil in a large nonstick pan over medium heat.

Add half the potato mixture, spread it evenly, and let it cook for a few minutes. Sprinkle mozzarella over the top, then cover with the remaining potato mixture.

Smooth the surface, cover, and cook gently for about seven minutes until golden on the bottom.

Slide the tortilla out onto a plate, add the remaining butter to the pan, and return the tortilla uncooked side down.

Cook for another seven minutes until both sides are golden and crisp, and the cheese has melted through.

Once done, transfer to a plate and let it rest for a few minutes.
