It’s the kind of dish that makes you reach for seconds before you’ve even finished your first plate – proof that the best part of dinner isn’t always the main course.
Ingredients

2 lb crusty country bread (about 2 loaves), preferably sourdough, cut into 1 1/2″ pieces
6 tbsp unsalted butter, divided, plus more for dish
1 large yellow onion, chopped
2 medium leeks, tough outer layer removed, thinly sliced into half-moons
4 cloves garlic, finely chopped
Kosher salt
Freshly ground black pepper
2 large eggs
2 1/2 c low-sodium chicken broth
1 1/2 c whole milk
2 tbsp mixed chopped fresh herbs, such as sage, rosemary, and/or thyme
Pinch of crushed red pepper flakes
Toast The Bread For The Perfect Base

Preheat the oven to 350°F.
Spread the bread cubes evenly across two baking sheets and bake for 15 to 20 minutes, tossing halfway through, until the pieces feel dry and the edges begin to turn golden.
This step helps the bread hold its texture once the liquid ingredients are added later.
Sauté The Aromatics

While the bread toasts, melt 3 tablespoons of butter in a medium skillet over medium heat.
Add the onion and leeks, stirring occasionally, until softened, about 7 minutes.
Stir in the garlic and cook for another minute until fragrant, then season with salt and black pepper.
Remove from heat and let the mixture cool slightly while you prepare the liquid base.
Combine The Mixtures And Let The Flavors Soak In

In a large measuring cup or medium bowl, whisk together the eggs, broth, milk, herbs, and red pepper.
Season generously with salt and black pepper. Increase the oven temperature to 375°F and lightly butter a 13×9-inch baking dish.
Transfer the toasted bread to a very large bowl, add the onion mixture and egg mixture, and toss until everything is well combined.
Let the mixture sit for at least 10 minutes, or up to an hour, so the bread can fully absorb the flavors.
Bake Until Golden And Perfectly Crisp

Spread the stuffing mixture evenly into the prepared baking dish, making sure all the liquid makes it in.
Cut the remaining 3 tablespoons of butter into small pieces and dot them across the top.
Cover the dish with foil and bake for 20 minutes.
Uncover and continue baking for another 25 to 30 minutes, until the top is crisp and golden brown.
Serve warm or at room temperature.
