Brunch is one of my favorite meals of the day. Not only do you get to eat all those delicious breakfast and lunch foods in the same setting, you can sleep in! Then have your first meal of the day between the hours of 10 am and 2 pm and call it brunch! The person who thought of this winning combination is genius!

Spinach and Sausage Quiche with Potato Crust made with Simply Potatoes® is my favorite brunch recipe. It’s easy to prepare, satisfies the whole family and is Weight Watchers friendly.  Simply Potatoes are never frozen and never require peeling or shredding.  Each quiche serves eight and is 3 Weight Watchers Freestyle Smart Points per serving. This recipe is definitely a winner!

 Even though this Spinach and Sausage Quiche with Potato Crust recipe is technically for brunch, I won’t tell anyone if you eat it anytime of the day.

Spinach and Sausage Quiche with Potato Crust Ingredients

Spinach and Sausage Quiche with Potato Crust Recipe

This recipe will make two Spinach and Sausage Quiche with Potato Crust with one 20 oz bag of Simply Potatoes Shredded Hash Brown. If you don’t need to serve two, make them both and freeze one for later.

Spinach and Sausage Quiche with Potato Crust Recipe

Potato Crust Ingredients

20 oz bag Simply Potatoes® Shredded Hashbrowns  (find them in the refrigerator section)

1/4 tsp garlic powder

1/2 tsp onion powder

Salt and Pepper to taste

Mix all ingredients together and pat in the bottom of two greased 9 inch pie plates.

Spinach and Sausage Quiche with Potato Crust Recipe

Bake for 20 mins in 375 degree oven or until slightly brown.

Spinach and Sausaage Quiche Ingredients (remember you are making two)

12 Large Eggs

2 Cups reduced fat Shredded Cheddar Cheese

2 Cups No Fat Plain Yogurt

10 oz frozen spinach thawed and drained

12 oz cooked turkey sausage crumbles

Beat eggs in large mixing bowl. Add other ingredients and stir until well blended.

Pour mixture evenly over both prepared potato crusts

Bake for 30 minutes or until center of quiche is firm and 165 degrees.

Let stand for 5 minutes before cutting.
